Chickpea “tuna” salad

Vegan chickpea “tuna” salad

A good staple to have in the fridge to eat alone as a snack, to make into a sandwich or top a salad with.

Ingredients:

*Use any veggies you like, this is just my preferred combo*

  • 1 can chickpeas (drained and washed)

  • 1/3 cup vegan mayo (vegenaise is my favorite)

  • 2 tbsp yellow mustard

  • 1/2 cup chopped carrots

  • 1/2 cup chopped carrots

  • 1/2 cup chopped onion (red, white, or yellow)

  • 1/4 cup chopped fresh dill

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt + pepper to taste

Drain your chickpeas, rinse and add to a medium bowl. Smash the chickpeas either with your hands, potato masher, or shred with a fork (or two). Next, cut up your veggies into smaller bites, similar to how you would for a soup; think mirepoix. Add the veggies to the bowl of mashed chickpeas then mix in vegan mayo, mustard and spices. Store in the fridge and enjoy!
