Bread

Use up your old bananas plus add some fiber, protein, omega 3’s and 6’s to get delicious and nutritious bread.

Vegan | Gluten Free | Refined Sugar Free

Ingredients:

  • 3 ripe bananas

  • 1/4 cup coconut oil (or 1/3 cup apple sauce)

  • 1/4 cup maple syrup

  • Flax “egg” (1 tbsp ground flax seeds, 3 tbsp water)

  • 2 1/4 cup gluten free flour (gf all purpose, oat flour, almond flour, or a mix of all!)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp salt

  • 1 tsp cinnamon

  • Optional: 1 cup chocolate chips, or nuts, or banana chunks, or strawberries, anything

Preheat oven to 350 F. In a small cup add 1 tbsp of ground flax seeds and 3 tbsp water to a cup. Stir the mixture and set aside while you make the rest of your wet ingredients. Mash ripe bananas with a fork or potato masher in a medium bowl. Add in a 1/4 cup coconut oil (can also substitute or supplement with apple sauce), 1/4 cup maple syrup, vanilla extract, the flax “egg” and mix together.

In a separate bowl mix together your flour, chia seeds, hemp seeds, salt, baking soda, baking powder, and cinnamon. slowly add your dry mix to the wet bowl and mix until smooth (DO NOT OVER STIR - pro tip so that your baked goods stay fluffy).If you choose to add in chocolate chips (yes) or chopped nuts (also yes), fold in gently or just sprinkle on top, again avoid over-mixing. Pour batter into a loaf pan and bake for about 60 minutes.
