Sweet & Spicy Peanut Tofu
Slightly Fried, Sweet & Spicy Tofu
Crispy and flavorful… Can you ask for anything more?
Best served with rice and a refreshing cucumber salad or ginger.
Ingredients:
1 package of extra firm tofu, cubed
1/4 cup PB (if sweetened omit adding honey/maple syrup)
1 tbsp honey or maple syrup
2 tbsp coconut aminos
1 tbsp sriracha
1 tsp rice vinegar
2 tsp freshly grated ginger
3 cloves of fresh garlic, minced
2 tbsp sesame oil
1/4 cup water
Directions:
Mix your PB, coconut aminos, sriracha, rice vinegar, grated ginger, minced garlic and water in a bowl. Set aside.
Coat your pan with sesame oil (or olive oil) and heat over medium heat. Once the oil is hot carefully place your cubed tofu into the pan. Move the tofu around coating it in oil. Let fry and get crispy.
Lower your heat, add your sauce, coat each piece, let sit for about 1-2 minutes. Turn off the heat and cover your pan, let sit for at least another 2 minutes.
Serve over rice topped with green onion, sesame seeds, and a cucumber salad or pickled ginger!
