Blueberry Scones

The easiest baked good you can make.

Vegan and Gluten Free of course. I’ve struggled to find a good gf scone for some time so I took matters into my own hands…

Ingredients:

  • GF flour (I would suggest all purpose or a mix of oat and almond)

  • Full fat coconut milk

  • Sugar (I used raw cane sugar)

  • Baking powder

  • Pinch of salt

  • Lemon

  • Blueberries! (fresh is best but frozen works too)

Directions:

  1. Preheat the oven to 400 degrees

  2. Mix the dry ingredients [flour, sugar, baking powder, salt] in a medium bowl

  3. Slowly add in the coconut milk and lemon.. be careful not to over stir!

  4. Fold in the blueberries or other fun mystery mix ins you decide

  5. Separate into 8 pieces and shape accordingly

  6. Place on lined sheet and bake for 20-25 minutes depending on crispness desired. They should have a crisp outside with a soft inside

Best enjoyed with hot tea or coffee YUM
